I eat all of these cheeses on a weekly basis! Anyone know how good or bad for you Brie is? That is my fave cheese of all time!

I despise cottage cheese, but the rest of them I love and eat frequently. Brie is also my fave. It's like cheese made out of butter. It's so delicious. It's so delicious, it can't possibly be good for you. In fact, I've got a little wheel of brie in my fridge right now, and I'm going to go eat it.

I love brie, too--and don't care much for Swiss--but brie has a lotta calories.:-(
Brie cheese contains high levels of sodium -- 178.6 mg per ounce. This accounts for 11.9 percent of the recommended daily sodium amount of 1,500 mg. Consuming too much sodium regularly contributes to your chance of developing high blood pressure and Americans often ingest over double the suggested amount, according to the U.S. Centers for Disease Control and Prevention.

Brie also has a high fat content. It usually is made with a fair amount of fat. 64 grams in a cup of Brie. Try Manchego. It is not soft and creamy but it has a nutty flavor and has 25 grams of fat in 100 grams of cheese which is close to a cup. Manchego is Spanish cheese from sheep milk. It has small crunchy granules in it and the consistency is the opposite of Brie but a little of it goes a long way so I tend to eat less. I like it with a red wine, which I rationalize makes it more healthy too. I agree with Viki. If it tastes good it cannot possibly be too good for you but that can be blamed on evolution and our ancestors craving sweet, salty, fatty, etc. foods that were not readily available a gazillion years ago.
Manchego is delicious. There's a little restaurant down the block from where I teach that uses Manchego in several of its dishes. I eat there a lot. ;)

Dang, I knew it. I guess I will stick to the cheeses on this list. Although Tyler did get me a brie cheese making kit for Christmas.....

Lab experiments, Brie, apple slices and champagne all go well together.

There's a little cafe down where I go in Florida that serves a fantastic appetizer, perfect for a summer night.
Very thin, crisp slices of apple dusted with cinnamon, grapes, thin slices of freshly-baked french bread, and a small wheel of brie that's been grilled. Half the reason I ordered it the first time was to see how it was possible to grill a wheel of brie without ending up with a grill covered with melted cheese. But it was not too melty, with a smokier flavor and grill marks. Perfect. And lacking in the usual pastry-dough coating. I tried it on my own grill with great success. Low-to mid heat, and put it up on the warming rack after giving it some grill marks. Had to watch it carefully so that it didn't explode.

I am definitely going to the store to pick up some brie, or maybe I will make some this weekend with my cool cheese making kit, courtesy of Tyler :)

I'd love to hear how it turns out!
I didn't make any cheese. This weekend went by too fast! I will definitely let you know how it turns out when I manage it.
